Wednesday is a big day here at the Playboy Mansion. After an early start walking the dogs, I normally get after it with a heavy weight-lifting session before swinging into the big words. Today I figured to shake up the schedule a bit with some long and smokey cookin’.
I rubbed up a pork butt after getting home from jujitsu last night and set it to dry in the fridge.
This morning I took my own damn time building up a bed of coals and getting my smoke just right. (That’s a big ol’ chunk of macadamia wood you can see drifting up through the top vent).
My plan is to just work as normal now that I’m all set up because I can follow the cook on the interwebs. As can you, right here.Because we live in the future.

UPDATE.
The initial cook is done. Now it’s time to wrap in butcher’s paper and rest in a temperature-controlled environment, ie. a little esky.
It comes out in the mid nineties and gets wrapped immediately. It'll drop down to low seventies over an hour or so, during which time it relaxes and softens up even further. I've pulled it apart and I've got it sitting in the oven in a covered dish on 75ºC now, waiting for dinner.

Well, how was it?
I had a little taste. (Dinner is still two hours away). It was/is awesome. Perfect bark and juicy meat.

Macadamia wood smoke eh? never tried that before. any thoughts/tasting notes on that front. I mostly use iron bark for smoke, hard to go past
