"Umami out the wazoo" there is probably a Japanese term for that, like Dorodango ("mud dumpling") in which earth and water are combined and moulded, then carefully polished to create a delicate shiny sphere resembling a billiard ball or Wabi sabi finding perfection in the imperfect.
Reminds me of the Mythbusters episode where they polished a turd using a method like this. I'm sure it's not related in any way to Japanese food though.
Aside from moving to Brisbane and stalking you to find this olace, just what can I do with the information about an insanely good meal at a wonderful, but pricey, restaurant?

Mythbusters is where I learned of it, more I was observing there is probably a uniquely Japanese word of phrase for "Umami out the wazoo".
