thanks god I'd already eater before I read this, otherwise it would have been torture and I would have had to sprint to the nearest japanese eatery

looks and sounds pretty damned good. In my old age i'm starting to pick things off the menu that i have never had before just in case i find my new favourite. It can be hit and miss, but when it hits . . . . oh man it gives that great feeling like you described.

"Umami out the wazoo" there is probably a Japanese term for that, like Dorodango ("mud dumpling") in which earth and water are combined and moulded, then carefully polished to create a delicate shiny sphere resembling a billiard ball or Wabi sabi finding perfection in the imperfect.

Reminds me of the Mythbusters episode where they polished a turd using a method like this. I'm sure it's not related in any way to Japanese food though.

Mythbusters is where I learned of it, more I was observing there is probably a uniquely Japanese word of phrase for "Umami out the wazoo".

Looks like a riff on miso rice congee. Found this - maybe substitute wagyu for the mushrooms. As they say in the classics, “Just Google it, mate.”
