There’s a Japanese place down the hill from us that I eat at only occasionally because there’s another Japanese place even closer that’s cheaper. But it was closed over the Easter weekend, so I went to the spendy place and decided I’d have something other than sushi or sashimi (or chicken katsu curry).
Ended up ordering this bad boy. Some sort of miso rice with wagyu.
Holy shit, it was good. Like, insanely good. Umami out the wazoo and incredible depth of flavour with just a bit of heat and perfectly cooked beef. I had trouble not groaning inappropriately with every mouthful.
I’m still not quite sure what it is, but I’ll be going back to find out.

looks and sounds pretty damned good. In my old age i'm starting to pick things off the menu that i have never had before just in case i find my new favourite. It can be hit and miss, but when it hits . . . . oh man it gives that great feeling like you described.
