Leftovers are indeed grand, but IMO they're a lunch food. Breakfast (besides coffee) is a myth invented by Kellogs to sell more wheat.

Those do look like particularly tasty leftovers though. Good eating!

I'm pretty sure it is written in the Dad contract that we get first pickings of all leftovers - kids learn early on never to cross that line. Fried mashed potato for breakfast, <any leftover ingredient whatsoever> plus cheese in a toasted sandwich, or if you are lazy on a piece of toast with cheese melted under a grill, these all fall into the category.

You can't beat a classic savoury mince on toast for breakfast. With a runny poached egg or two on top. The best savoury mince is undoubtedly leftovers from the night before.

I really toasted sanders made up with cheap cheese and the leftover spicy mince from an Old El Paso taco kit. There. I said it.
